Traditional Roast Turkey for Christmas
Make a delicious roast turkey without any of the hassles at Christmas. Use the same sticky glaze that you would use on ham to flavour and colour a turkey crown.

INGREDIENTS
50g softened butter
2kg bone-in turkey crown
1 teaspoon five-spice powder & a sprinkle of ground cloves
To make the glazing
4 tablespoons honey
1 tbsp mustard Dijon
1 tablespoon red wine
METHOD
STEP 1 Preheat oven to 190 degrees Celsius/170 degrees Celsius fan/gas 5. Spread butter evenly around the turkey crown and season with salt and half of the five-spice. Roast for 30 minutes, skin-side up, in a roasting tin. While the crown roasts, whisk together all of the glaze ingredients in a dish along with the remaining five-spice.
STEP 2 Remove the crown from the oven and thoroughly brush half of the glaze over the skin. Continue roasting for a further hour, coating twice more, until the turkey is fully cooked and the glaze is sticky and caramelised. Allow at least 20 minutes before carving. Make gravy using the juices from the pan.
